This taco-flavored bread from the bread machine has a pleasant, slightly spicy kick. We enjoyed it served as open-faced Sloppy Joes, but it works well alongside soups, chili, or as sandwich bread. The taco seasoning gives a consistent, well-rounded spice profile without extra measuring.

One thing that surprised me was that the recipe includes whole wheat flour. The Man of the House usually avoids wheat bread, yet he liked this loaf. The combination of bread flour and whole wheat produces a sturdy crumb with good flavor.

If you wonder about the unusual appearance of the loaf in the photos — that odd top shape — it was simply how this particular loaf came out of the machine. Your loaf will likely look more uniform.

This recipe is written for a two-pound bread machine. Use the wheat setting with a medium crust.

Follow your bread machine’s instructions for the order in which ingredients should be added. (On my Zojirushi bread machine I add liquids first.) After the machine starts kneading, check the dough after five to ten minutes. It should form a smooth, round ball.

If the dough seems too dry, add additional liquid a teaspoon at a time until it reaches the right consistency. If it looks too wet, add flour a tablespoon at a time. Proper dough consistency helps produce an even crumb and rise.

  • 1 1/2 cups water
  • 2 2/3 cups bread flour
  • 2 cups whole wheat flour

Instructions

  • This recipe is for a two-pound bread machine. Use the wheat setting with medium crust.
  • Add ingredients to your bread machine in the order recommended by the manufacturer. If you add liquids first, put the water and olive oil in before the flours and seasonings.
  • Start the machine on the wheat cycle. After five to ten minutes of kneading, check the dough. It should form a smooth, round ball. If it is too dry, add water one teaspoon at a time. If it is too wet, add flour one tablespoon at a time until the dough is properly shaped. Continue the cycle until baking is complete.
