Gluten Free Drop Biscuits

I’m always looking for ways to stretch dinner. When last-minute guests arrive, a batch of drop biscuits can make a meal go further without much effort. They’re also simply delicious. Drop biscuits require no rolling or kneading—just mix, drop, and bake. For busy weeknights, these gluten free biscuits are a reliable, fast answer when I want fresh bread on the table.

They bake up tender with a crisp exterior and a soft, cheesy interior. Because they’re drop-style, they come together in minutes and are baked in about 18 minutes, so you can have warm biscuits from start to finish in under 30 minutes.

For this recipe I used Ryze Gluten Free Flour Blend. It’s a rice-based blend made without added gums, and I found it gave the biscuits a pleasant texture without the grittiness that can sometimes occur with gluten free flours. The blend handled the recipe well and produced tender, consistent results.

Bacon, Cheddar & Chives

Bacon, cheddar, and chives are a classic combination, and these drop biscuits are full of all three. I use a full cup of shredded sharp cheddar (coarsely shredded, not finely grated) and about half a cup of crumbled bacon so every bite has savory richness. Fresh chives add brightness, and a bit of minced garlic enhances the savory profile.

After combining the dry ingredients, work in a few tablespoons of softened butter until the mixture is crumbly. Stir in the cheese, bacon, chives, and garlic, then add the egg and milk. Mix until just combined, drop spoonfuls onto a parchment-lined baking sheet, and bake until golden.

Ingredients

  • 2 cups gluten free flour (I use Ryze Gluten Free Flour Blend)
  • 1 1/2 teaspoons gluten free baking powder
  • 1/2 teaspoon salt
  • 3 Tablespoons softened butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon
  • 2 Tablespoons chopped chives
  • 2 teaspoons minced garlic
  • 1 egg
  • 1 cup milk

Instructions

  • Preheat oven to 400 degrees F (200 C).
  • In a bowl, whisk together the gluten free flour, baking powder, and salt.
  • Work the softened butter into the dry mixture with a fork or pastry cutter until crumbly.
  • Stir in the shredded cheddar, crumbled bacon, chopped chives, and minced garlic.
  • Add the egg and milk, mixing until just combined.
  • Drop the batter by spoonfuls into 12 portions on a parchment-lined baking sheet.
  • Bake for 18–20 minutes or until golden brown. Cool slightly before serving.
