Homemade marshmallows may look intimidating, but they’re surprisingly simple and fun to make. Kids enjoy helping and watching the mixture turn fluffy—like a little kitchen science experiment.

These marshmallows are soft, pillowy, and perfect plain or decorated for St. Patrick’s Day. I kept a few plain to top a steaming cup of hot chocolate — ideal on a chilly evening. They also make a great gift or party treat.

Ingredients:

  • 3 tablespoons unflavored gelatin
  • 1 cup water, cold and divided
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon salt
  • Powdered sugar, for coating

How to make Homemade Marshmallows for St Patrick's Day

Directions:

  • Whisk together 1/2 cup of the cold water and the gelatin in the bowl of a stand mixer. Let sit for 15–30 minutes to soften.
  • In a saucepan over low heat, combine the sugar, honey, the remaining 1/2 cup water, and salt. Stir until the sugar dissolves.
  • Increase the heat to high and cook without stirring until the syrup reaches about 240°F (soft-ball stage). Remove from heat immediately.
  • With the mixer on low using the whisk attachment, slowly pour the hot syrup into the gelatin. Once combined, increase the speed to high and whip for about 15–20 minutes, until thick and fluffy. Add the vanilla during the last 2 minutes of whipping.
  • Grease a 9×13-inch baking dish generously. Pour the marshmallow mixture into the pan and smooth the top. Let set for at least 4 hours or overnight.
  • Turn the set marshmallow slab onto a cutting board. To cut cleanly, dip a knife in hot water and wipe dry between cuts. Cut into cubes, then toss each piece in powdered sugar to prevent sticking.

Green Coconut Topping

Ingredients:

  • 1 cup white chocolate
  • 1–2 cups unsweetened shredded coconut
  • Green food coloring (a few drops)

Directions:

  • Melt the white chocolate in a double boiler or microwave-safe bowl. If needed, add 1 tablespoon coconut oil to smooth the chocolate.
  • Place shredded coconut in a bowl and mix in green food coloring until you reach the desired shade.
  • Dip each marshmallow halfway into the melted white chocolate, then roll the chocolate-covered portion in the green coconut. Allow to set on parchment. Work quickly to avoid melting the marshmallow.
