Cook the pasta

Bring a large pot of water to a rolling boil and salt it well. Cook the pasta according to package directions until al dente. Reserve a cup of the starchy pasta water before draining — it can help loosen or thicken the sauce if needed.

Sauté Bacon

Cut bacon into bite-size pieces and cook in a skillet until crisp. Remove the bacon with a slotted spoon and drain excess fat, leaving about one tablespoon of bacon fat in the pan to cook the chicken for added flavor.

Cook chicken

Pat the chicken pieces dry, season with salt, pepper, garlic powder, and onion powder. Add to the hot skillet and cook undisturbed for about 3 minutes, then flip and cook another 2 minutes until cooked through. Remove and keep covered while you make the sauce.

Make the sauce

Melt a tablespoon of butter in the skillet over medium heat. Sauté the minced onion and garlic until softened and fragrant, about a minute. Stir in the flour and cook 30 seconds to remove the raw flour taste without letting it burn.

Lower the heat and add chicken stock in batches, whisking and scraping the browned bits from the bottom of the pan. Those browned bits add concentrated flavor to the sauce. Once the stock is incorporated and the sauce is smooth, slowly stir in the heavy cream.

Reduce the heat, add shredded cheddar and ranch seasoning, and stir until the cheese melts and the sauce becomes glossy and cohesive. If the sauce is too thick, loosen with reserved pasta water a tablespoon at a time.

Add chicken and mix

Return the cooked chicken to the skillet along with the crispy bacon and drained pasta. Remove the pan from heat and toss everything gently to coat the pasta and chicken in the sauce. Taste and adjust seasoning with salt and pepper if needed.
