For me, it’s baking. I bake year-round but especially during the holidays. It’s not just part of my work as a food blogger; I love sharing freshly baked treats with family and friends, filling cookie trays for parties, and decorating cookies while watching holiday classics.

Use only a drop or two of concentrated peppermint oil to avoid overpowering the delicate flavor; if you prefer, substitute peppermint extract at a larger measure (about 1/4 teaspoon).

Shape into small balls, flatten gently, and press an indentation in the center of each cookie with your thumb or the back of a spoon to hold the frosting after baking.

AIP “Chocolate” Mint Thumbprint Cookies (Paleo)

Serves: 1 dozen
Ingredients
  • 1/2 cup palm shortening
  • 1/4 cup coconut sugar
  • 2 tablespoons raw honey
  • 1/4 cup carob powder
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 gelatin “egg” (1 tablespoon gelatin powder + 4 tablespoons water)
  • 1 teaspoon apple cider vinegar
  • 1/2 cup coconut flour
  • 1/2 cup arrowroot starch
  • Peppermint Frosting:
  • 4 tablespoons coconut butter, melted
  • 1–2 drops food-grade peppermint oil (or 1/4 teaspoon peppermint extract)
  • 2 teaspoons raw honey
Instructions
  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a stand mixer, cream the palm shortening, coconut sugar, and honey. Add carob, cream of tartar, baking soda, and salt; mix to combine.
  3. Make the gelatin “egg”: sprinkle gelatin over 4 tablespoons water in a small saucepan, let sit for a minute, then whisk over low heat until very foamy.
  4. Pour the gelatin mixture into the cookie batter and mix until incorporated.
  5. Add coconut flour and arrowroot starch and mix. Add apple cider vinegar and mix until the dough holds together and doesn’t stick to the bowl. If too sticky, add a pinch more coconut flour.
  6. Divide dough into 12 balls, place on the prepared sheet, flatten slightly, and press an indent into the center of each cookie.
  7. Bake for 12 minutes, then cool on a wire rack while you prepare the frosting.
  8. Stir melted coconut butter and raw honey together, then add 1–2 drops of peppermint oil (or peppermint extract) and mix well.
  9. When cookies are cooled, spoon a teaspoon of frosting into each thumbprint. Allow frosting to set before serving.
Notes
~ Cocoa powder can replace carob if you are not on AIP, but cocoa is less sweet, so you may need to increase coconut sugar or honey. If the frosting is too runny, chill briefly to firm it up; if too firm, add a 1/4 teaspoon melted coconut oil. Store covered at room temperature, refrigerate, or freeze for longer storage.
