Ingredients
- 1½ pounds boneless, skinless chicken breasts
- 2 cups Minute Rice (white or brown)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can water (use one of the soup cans)
- 1 envelope Lipton Onion Soup Mix
- 1 tablespoon butter

Step 1 In a medium bowl, combine 2 cups uncooked Instant rice, both cans of creamy soup, and one can of water. Stir until well blended.

Step 2 Pour the rice mixture into a generously buttered 9×13 baking dish, then place the chicken breasts directly on top of the mixture.

Step 3 Evenly sprinkle the Lipton onion soup mix over the chicken. The onion soup mix adds plenty of flavor and salt, so extra seasoning is optional.

Step 4 Cover the pan with foil and bake in a 350°F oven for 1 to 1½ hours, or until the chicken is cooked through. Keep the foil on for at least an hour so the rice can steam and fully cook—this is why some call it “no peek” chicken.

Ingredients

Instructions
- Preheat oven to 350°F and generously grease a 9×13 baking dish with about 1 tbsp butter.
- In a medium bowl, combine 2 cups uncooked Instant rice, both cans of soup, and 1 can of water. Mix until smooth.
- Pour the mixture into the buttered baking dish.
- Arrange the chicken breasts on top and sprinkle evenly with the envelope of onion soup mix.
- Cover tightly with foil and bake 1–1½ hours, or until chicken is cooked through and the rice is tender.
Notes
- Minute Rice cooks much faster than regular rice. If using standard rice, partially precook it before assembling the dish.
- 1½ pounds of chicken equals about 2–4 breasts depending on size. Cooking time varies by oven; ensure chicken reaches a safe internal temperature.
- Once cooked, you can slice the chicken for serving or dice and mix it into the rice for easier portioning.
- Side idea: air-fried broccoli with olive oil and seasoning is quick and complements the casserole well.
