Gooey Drop Brownies use just four ingredients and can be mixed, baked and cooled in about 30 minutes — intensely chocolatey and quick.
These brownies are simple, fast and delightfully chewy. They are not a typical brownie or cookie batter and they aren’t a brookie. Drop Brownies are thin, gooey brownie bites made from just a few pantry staples.
A short melt on the stove, drop onto baking paper and seven minutes in the oven — that’s all it takes. These bite-sized treats come together quickly and cool fast, so they’re ready to enjoy almost immediately.
I usually prepare, bake and cool a batch in under half an hour. I often bake two sheets at once so I can snack on the first batch with a cup of tea while the rest cool. My family devours them — the first tray disappears in no time. Now I double the recipe and still only have a few left for the next day.
I make these in different sizes. If you use a dessert spoonful and flatten each drop slightly, they need only a couple more minutes of baking. One important note: the brownies will look and feel a bit soft and underbaked when they come out of the oven. Resist the urge to return them to the oven. As they cool they firm up and become the chewy brownie bites you want.

Ingredients
- 1 cup Semi-sweet chocolate chips
- 1 can (397g) Sweetened condensed milk
- ½ cup Butter
- 1 cup Flour
- White chocolate melted, to drizzle over (optional)
Instructions
- Preheat the oven to 180°C (350°F). Line baking sheets with baking paper.
- Combine the chocolate chips, sweetened condensed milk and butter in a saucepan. Heat over medium, stirring, until everything is melted and smooth.
- Stir in the flour until a thick, toffee-like mixture forms. If it feels too runny, add a little more flour. Let the mixture cool about 5 minutes so it’s easier to drop.
- Drop rounded teaspoonfuls onto the prepared baking sheets about 5 cm (2 inches) apart. Bake for 7 minutes — do not overbake.
- The brownies will be very soft when they come out. Leave them on the baking sheets a few minutes, then transfer to a cooling rack and cool completely. They will firm up as they cool.
- Drizzle with melted white chocolate if desired.
