Spaghetti squash is a nutritious, low-calorie base—about 40 calories per cup—with roughly 2 grams of fiber and 1 gram of protein per cup, plus vitamins A and C and potassium. It’s a nutrient-packed canvas for bold, savory flavors.

Use whatever vegetables you have on hand. Stir in salsa for instant flavor and add black beans for extra plant-based protein and fiber. A half-cup of black beans provides around 8 grams of protein and 7 grams of fiber, making the meal both filling and nourishing.
