Creamy Garlic Parmesan Sauce
After cooking the chicken, wipe the skillet clean to keep the sauce bright and creamy. While leaving the browned bits would add flavor, cleaning the pan ensures a white, silky sauce. I tested both ways and preferred the cleaner pan for appearance without sacrificing garlic flavor.
In the cleaned skillet, melt more butter and sauté minced garlic briefly until fragrant. Add white cooking wine and reduce by half. Lower the heat, stir in heavy cream and bring to a gentle simmer, seasoning with salt and pepper. Add freshly grated Parmesan and simmer until the sauce thickens slightly. Fold in chopped baby spinach and stir until wilted. Return the chicken to the pan, finish with a squeeze of lemon and a pinch of red pepper flakes.

Ingredients
- 4 chicken breast halves
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 3 tbsp Land O Lakes® Butter with Canola Oil; divided
- 6 cloves garlic, minced
- 1/4 cup white cooking wine
- 1 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
- 2 handfuls fresh baby spinach, roughly chopped
- Pinch red pepper flakes
- Squeeze of fresh lemon juice
Instructions
- Season chicken all over with salt, pepper and garlic powder. Melt 1 tbsp butter with canola oil in a large skillet over medium-high heat. Sear chicken 5 minutes per side, until cooked through. Remove and set aside. Wipe out the pan and return it to the stove.
- Melt remaining 2 tbsp butter in the skillet. Sauté garlic until fragrant, about 30 seconds. Pour in the white wine and reduce by half.
- Reduce heat to medium-low. Add the heavy cream and bring to a gentle simmer, stirring occasionally. Season with salt and pepper to taste.
- Stir in the Parmesan and simmer until the sauce thickens slightly. Add the spinach and stir until wilted.
- Return the chicken to the pan, add a squeeze of lemon and a pinch of red pepper flakes. Serve over noodles, rice, or enjoy on its own. Enjoy!
