Change up your egg-and-toast breakfast (or dinner) routine with these simple, healthy Black Bean and Egg Tostadas — ready in minutes with just a few staple ingredients.

I’m typically an egg-and-toast person for breakfast. Occasionally I have oatmeal, but most mornings it’s a quick fried egg on a slice of lightly buttered Ezekiel bread with my coffee. Eggs are also my go-to when I want breakfast for dinner, which is how these easy Black Bean and Egg Tostadas became a regular option.
When you have the ingredients on hand — which is often the case — these tostadas come together in just a few minutes. The recipe below is for one tostada, though I usually make and eat two at a time.

This recipe works well for those nights when you don’t know what to make for dinner or whenever you want something different for breakfast. It’s quick, satisfying, and easy to adapt.
I often double the black beans and store the extras in a container so I can assemble tostadas for a few days without extra work. I also enjoy adding corn tortillas and black beans to eggs in other dishes, like a tortilla skillet — it’s a great flavor combination.

Black Bean and Egg Tostadas
Yield: serves 1
Total Time: 10 minutes

Ingredients:
- 1 corn tortilla
- 2 tablespoons shredded Mexican blend or cheddar cheese
- 2 tablespoons black beans, drained and rinsed
- 1 egg
- Green and/or red salsa
- Hot sauce (optional)
- Avocado (optional)
- Cilantro (optional)
Directions:
- Heat a nonstick skillet over medium. Place the corn tortilla in the skillet and cook one side for about 1 minute, then flip.
- Add the cheese and black beans to the tortilla and cook 1–2 minutes more, until the bottom of the tortilla is crisp and the cheese has melted. Slide the tostada onto a plate.
- Lightly spray the skillet with nonstick spray, crack the egg into the skillet, and cook to your preferred doneness. Slide the cooked egg onto the tostada.
- Top with salsa, avocado, cilantro, and a dash of hot sauce if desired. Serve immediately.
