Cinco de Mayo is almost here, and I’m all about Mexican food — bring it on! While you don’t need a holiday to enjoy great Mexican flavors, it’s the perfect excuse to share another favorite: a warm, cheesy corn dip that’s always a hit at parties.

This creamy, cheesy corn dip is ideal for Cinco de Mayo, game day, or any gathering where you want a crowd-pleasing appetizer. It’s rich and indulgent thanks to cream cheese and shredded jack, but sometimes you deserve a treat — and this is one worth sharing.

The recipe couldn’t be simpler: combine the ingredients in a bowl, spread them into a small skillet or baking dish, and bake until the top is melty and bubbly. Serve it hot with tortilla chips for dipping. If you’re feeding a larger group, just double the ingredients and use a larger dish.

The perfect party dip — creamy, cheesy, flavorful, and easy to make.

Ingredients

  • 1 (8-ounce) block plain cream cheese, softened
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • 2 cups shredded jack cheese, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 (15-ounce) can canned corn, drained
  • 4 ounces green chiles, drained (optional)
  • Tortilla chips, for serving

Instructions

  1. Preheat oven to 350°F. Spray a small cast iron skillet or an 8×8 baking dish with cooking spray and set aside.
  2. In a mixing bowl, beat together the cream cheese, sour cream, and mayonnaise until smooth. Stir in 1 cup of the jack cheese, chili powder, garlic powder, cumin, and the drained corn (and chiles, if using) until well combined.
  3. Transfer the mixture to the prepared skillet or baking dish and smooth into an even layer. Sprinkle the remaining cup of cheese over the top. Bake for 15–20 minutes, until the dip is lightly golden and bubbly.
  4. Remove from the oven. Garnish with fresh lime wedges and cilantro if desired, and serve hot with tortilla chips.
