Ingredients
- 56 grams coconut flour (about 1/2 cup)
- 2 TBS unsweetened cocoa powder
- 5 grams baking powder (1 tsp)
- 1/4 tsp salt
- 1/2 cup unsalted butter, room temperature, softened
- 50 grams granulated sweetener of choice (about 1/4 cup) I used granulated monk fruit sweetener
- 3 oz keto chocolate, melted and cooled (I used Lily’s chocolate chips, melted in the microwave)
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 2 oz keto milk chocolate chips (about 1/4 cup) I used Lily’s milk chocolate chips
- 2 oz keto white chocolate chips (about 1/4 cup) I used Lily’s white chocolate chips
Instructions

Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper. In a large bowl, sift together the coconut flour, cocoa powder, baking powder and salt until there are no lumps. Set aside.

In a separate large mixing bowl, place the softened butter and granulated sweetener. Beat on low for 10 seconds, then on medium for about 1 minute until smooth. Scrape down the sides of the bowl as needed.

Add the melted, cooled chocolate and beat on medium-low for 30 seconds to combine. Add the eggs and vanilla extract, and beat on medium-low for another 30 seconds. Scrape the bowl again to ensure everything is incorporated.

With the mixer on low, gradually add the dry ingredients to the wet mixture. Once incorporated, beat on medium-low for 30 seconds until a smooth dough forms. Gently fold in both types of chocolate chips until evenly distributed.

Scoop the dough by tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart. Roll each scoop into a tight ball, then gently press to your desired size and thickness. Bake in the preheated oven for 8 to 10 minutes, or until the edges darken slightly.

Remove the cookies from the oven and let them cool on the baking sheet for at least 5 minutes to firm up. Transfer to a wire rack to cool completely before serving.
