Ingredients

  • 1 box white cake mix (about 15.25 oz; Duncan Hines Classic White recommended)
  • Ingredients listed on the box (water, eggs, oil)
  • 5 tablespoons all-purpose flour (34 g)
  • 2 tablespoons mayonnaise (full-fat preferred)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract (optional)

Instructions

Preheat oven to 325°F.

  1. Sift the cake mix into a mixing bowl for a lighter texture.
  2. Add the liquids called for on the box (water, eggs, oil) and combine.
  3. Stir in the vanilla, almond extract (if using), flour, and mayonnaise.
  4. Mix on medium speed for 2 minutes until batter is smooth and aerated.
  5. Leftover batter can be refrigerated for up to one day.
  6. Pour batter into two greased and floured 8″ pans. Bake at 325°F for 25–30 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs.

For cupcakes, bake at 350°F for 18–20 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs attached.
