Smoked Turkey Rub Recipe

We love smoking our turkey for Thanksgiving — it’s an easy, mostly hands-off method that yields excellent results.

This rub complements the smoke from pellets or wood chips perfectly; we typically use an electric smoker, but any smoker will work.

What makes this recipe so yummy

  • Making your own rub gives you control over the ingredients and the flavor profile.
  • It’s economical and adds a lot of depth to the turkey without extra work.
  • Make a large batch to use on chicken or pork as well — it stores well.
  • Perfect for a holiday turkey when paired with a dry brine.

Recipe variations and substitute ideas

  • Olive oil or vegetable oil: brush on the skin for a wetter rub that helps spices stick.
  • Melted butter: rub under and over the skin for richer flavor.
  • Table salt: can be used in place of kosher salt if needed.

How to store leftovers

Store the seasoning blend in an airtight container for up to three months. Adding a pinch of cornstarch helps prevent clumping when storing larger batches.

Frequently asked questions: FAQs

Why is my smoked turkey skin rubbery?

Rubbery skin can happen when smoking. Adding a small amount of baking powder to the rub can help the skin crisp up while adding great flavor.

Can I use this rub with an air fryer?

Yes — this seasoning works well in an air fryer and is particularly good on wings and smaller cuts of poultry.

  • ½ teaspoon Celery Salt

Instructions

  • Combine all ingredients in a small bowl and whisk, or place them in a sealable bag and shake until blended.

Notes

Allowing the turkey to rest with the rub at room temperature improves seasoning penetration and prevents putting a cold bird into the smoker.
