With the holidays approaching, this condensed cream of mushroom soup is a great make-ahead helper for casseroles, slow-cooker meals, and weeknight dinners. I love canned soups for convenience, but when I can, I prefer homemade. It tastes fresher, I know exactly what’s in it, and it’s surprisingly simple to prepare.
I used this version in my cheesy hash brown casserole and also gave a jar to my parents, who poured it over chicken in the slow cooker for an easy dinner. It’s condensed, so it’s meant to be used in recipes rather than eaten straight from the jar. If you want a bowl of soup, simply heat and add 2 cups of milk to thin it to a serving consistency.
This recipe is quick to make, can be doubled or tripled for larger batches, and keeps in the refrigerator for up to one week. It’s not ideal for freezing, so plan to use it within that timeframe. Enjoy this homemade condensed cream of mushroom in all your casseroles, soups, and holiday dishes.

Homemade Condensed Cream of Mushroom Soup
Ingredients
- 1 Cup fresh mushrooms finely chopped
- 1/4 Cup butter
- 2/3 Cup milk
- 1 1/4 Cup vegetable broth
- 1/3 Cup all purpose flour
- 1 Teaspoon onion powder
- 1 Teaspoon garlic powder
- 1/2 Teaspoon salt
- 1/4 Teaspoon pepper
Instructions
-
Melt the butter in a skillet over medium-low heat. Add the finely chopped mushrooms and cook until tender. Season with salt and pepper to taste.
-
Add the garlic and cook for about 2 minutes until fragrant.
-
Stir in the flour and cook for an additional 2 minutes to remove the raw flour taste. Gradually whisk in the milk and vegetable broth until the mixture is smooth.
-
Bring the mixture to a boil and let it boil for 1 minute to thicken. Remove from heat and let it cool for a few minutes.
-
Transfer to a jar for storage in the refrigerator, or use immediately in your favorite casserole or dish. To serve as a soup, heat and add 2 cups of milk to reach the desired consistency.
